Soup with Root Vegetables, Mushrooms and Chicken

Brian isn't home this evening for dinner. But since it's "his week," he whipped up a pot of soup for us yesterday for tonight's dinner. Isn't he the best? I have to admit -- this giving up the menu planning thing was a bit tough for me. But now that we are mid-week, I kind of really like it.
