Turkey Kielbasa Soup

Mo's Turkey Kielbasa Soup
Garlic Bread

NOTE: Our oldest son had two bowls of the. He absolutely loved it. Our youngest ate without argument, but said it looked like "garbage water." It does taste good though.

Mo's Turkey Kielbasa Soup

2-2.5 cups dry black eyed peas
1 onion, chopped
4-5 celery stalks, chopped
salt, pepper
1 turkey kielbasa, cut in half-moons
1 green pepper, chopped
Cilantro
Oregano
Garlic Salt
2 bay leaves

1. Soak peas overnight and drain
2. Saute onion, green pepper, turkey kielbasa and celery with salt and pepper in large pot.
3. Add black eyed peas and fill with water half inch over beans (NOTE: I used 4 cups chicken broth, 2 cups water).
4. Add 2-3 Tbsp cilantro, oregano, a little garlic salt, pepper to taste and 2 bay leaves.
5. Bring to broil, then simmer for about 2 hours on med-low.

I'm right there with C - that is one unappetizing looking soup. Then again, the worst looking foods (um, oatmeal, anyone?) often taste the best.

Ah, to have children that will eat soup. Or beans. Or kielbasa...
