Menu:
Dinner Waffle with Ham, Cheese & Fried Egg || Top Chef, Season 2, Elia
1/3 cup refried beans, warmed
1 T olive oil
Salt & Pepper (to taste)
1 T + 2 tsp unsalted butter
1 large egg
1 frozen waffle
Maple syrup for drizzling
2 slices of Muenster cheese
2 slices coppa ham
1 T chopped fresh flat-leaf parsley
1. Preheat broiler
2. In a small bowl, combine the beans with the olive oil. Mix well and season with salt and pepper. (NOTE: You may want to heat a bit).
3. In a small skillet, melt 1 T butter over medium heat. Crack the egg into the skillet and fry to desired firmness. Remove from skillet and set aside.
4. While you're frying the egg, toast the waffle to desired doneness. Spread with the remaining butter and then with bean mixture.
5. Drizzle with syrup and top with cheese.
6. Place the waffle on a baking sheet and broil until the cheese melts, 2 to 3 minutes, watching carefully so it does not burn.
7. Remove from the oven, top with the ham and fried egg, and sprinkle with parsley. Season with salt and pepper to taste and serve immediately.

** Try not to burn the edges of the egg like I did. That's what happens when you try to help one child with homework, while talking on the phone and cooking. Whoops.
