Menu:
Salmon Roasted in Butter || Joy of Cooking
Asparagus
Salad with Beets
Preheat oven to 500 degrees.
In small saucepan, heat 2 T. butter, 2 T. olive oil, and 1/4 t. salt.
Pour half butter mixture in shallow roasting pan.
Lay salmon, skin side up in pan.
Season with salt and pepper.
Bake 5 minutes, then flip fish to other side.
Bake 5 more minutes. Be careful not to over cook.
