Cod with Brown Butter & Pine Nuts

Cod with Brown Butter & Pine Nuts
Spinach
Red Quinoa
Avocado

Cod with Brown Butter & Pine Nuts

Ingredients
Serves 4 | 12 minutes

7 tablespoons of butter (I used Earth's Balance)
2 tablespoons lemon juice
3 tablespoons pine nuts, chopped
4 cod fillets (use 1/2 pound per adult

Melt the butter in a large frying pan over medium heat until the butter is light golden brown. Add the lemon juice and pine nuts and let cook for 1 minute.

Add the fish to the pan and fry it until it's flaky and cooked through, approximately 5 minutes a side.

Place the fish on plates and drizzle with the brown butter and nut sauce.
