Pre-Triathlon Dinner

Menu:
Heirloom Tomatoes, Roasted Red Pepper & Cilantro
Roasted Sweet Potatoes
BBQ Chicken Breasts

In honor of a triathlon I'm doing tomorrow (gulp...) Brian made me this delicious pre-triathlon dinner. Sweet potatoes have become a bit of race tradition for us, thanks to our friend Chris. Yum!
