Vegetarian Taco Salad

Taco Salad
Romaine lettuce, pinto bean, black olives, cheddar cheese, tortilla chips, salsa and sour cream "dressing."

Vegetarian taco salad is one of my favorite dinners. I use dried beans to make a nice black bean substitute for meat. I stir taco seasoning into the cooked beans, and they are truly delicious!

Great idea. I'm going to have to try this! I usually have taco meat with it, but this is something that really doesn't need it. But the extra spices will be nice.

Love the dressing - we do that a lot. If you want a really cool sauce, combine finely chopped sun-dried tomatoes (I use oil packed), salsa and lite mayo in a 1:2:2 ratio. This is FANTASTIC on fish, especially salmon, but is also great with chicken or scrambled eggs. It works with Greek yogurt too, but drain the salsa first. Can't go wrong with Jacques Pepin!
