Chicken & Waffles


Chicken & Waffles with Maple Syrup
Salad with Cucumbers and Sunflower Seeds

A chicken and waffle restaurant opened up not too far away from our house. I've been anticipating it's opening for awhile, but have never had the chance to get there yet so decided to make our own. I did make the waffles, but we used chicken tenders from Trader Joes. They were great.

Waffles || Joy of Cooking

1.75 C all-purpose flour
1 T baking powder
1 T sugar
1/2 t salt
3 large eggs, well beaten
8 T butter
1.5 C milk

Mix the dry together; whisk the wet together. Make a well in the dry and add the wet. Gently whisk them together with a few swift strokes. (The batter should have a pebbled look, similar to a muffin batter.) Make on waffle iron.
