Kale Salad
I swear, the best thing about kale salad is that is gets even better a day or two later. These were leftovers from Saturday. As for the enchiladas, yum. I had made them before, but I cut the sweet potatoes into 1/4" cubs, and cooked it for quite a bit longer. It was delicious.
